We recently celebrated our 'Vap Magul' ceremony or new rice planting ceremony at the resort's organic paddy field. Our paddy field and farm is tended to by local farmers and gives guests a chance to experience authentic and traditional farming methods of Sri Lanka. The resort's new greenhouse also stared operations on this day. We're so excited to share this video shot and edited by our resort's Engineering Team.
Today on the #meettheteam series meet our Executive Pastry Chef, Chef Suraj Mendis. Prior to discovering his passion for culinary skills, he was an engineer for seven years! He then found a passion for being a chef, and within the first few years performed well in culinary arts competitions in Sri Lanka, grabbing 27 medals varying from gold, silver and bronze for his skills. Then he moved overseas, working for over 15 years in some of the world's top hotels.

Both hailing from Tangalle, Chef Asanka and Chef Supun have adventurous spirits and an infectious lust for life that makes them a formidable pair behind the teppanyaki grill at our ocean-side Verala restaurant. From humble beginnings as kitchen stewards, their passion and hunger to learn new culinary skills captured our attention. Their raw potential was nurtured through rigorous training in the art of teppanyaki, with self-motivation to perfect their juggling and showmanship skills every chance they get. The resort celebrated World Wetland Day at the resort by planting 100 mangrove plants close to the resort's organic paddy field. Children from a school close to the resort and guests of the resort joined us for this occasion. This event was another initiative of the resort to be a true sustainable leader in hospitality.
In 2015, the Maldives witnessed a damaging bleaching event to its coral reefs. Anantara Dhigu Maldives Resort and Anantara Veli Maldives Resort combined forces with Coral Reef CPR and its experts to create the Holistic Approach to Reef Protection (HARP). At the age of 17, Fabio finished hotel school in Naples and entered the industry straight into operations. He is one of the youngest ever, Director of Food and Beverage when he was at Grand Hyatt, Jakarta just at the age of 31. He loves this industry as it is dynamic and changes every day. According to... Fabio, "he must always be prepared to make someone's day special, every day". He also loves playing golf whenever he gets the time and spending time with his family.
